The proprietor of the business, Paul Dalley, has a real passion for food and considers himself very fortunate working with his dedicated team.
Paul has years of experience in all aspects of catering, that includes cooking in professional kitchens as a fully qualified chef, running restaurants, management in the City of London and consultancy in associated projects.
Paul admits it is all the practical help and positive advice from his little "helpers and advisers" (especially the mysterious one) that really enables him get it right. He could not do without them.
Paul enjoys talking to his customers, offering advice as to their personal tastes in food and wine.
His years of experience in the food industry enables him to understand their personal requirements.
Also, Paul has considerable, practical experience about gastromony in South West France, gleaned from the locals, when he lived near Castres.
He says, "That is what real food is all about.
If I ever start to take it too seriously then I will give it all up. Food and cooking should always be fun
and enjoyed with a glass or three of good wine".
